Today we are going to prepare a trendy dish from Italy, a Parmigiana risotto. It is made with onion, garlic, chicken broth, parmesan cheese, and Le Stagioni d ’Italia Oil to give it that much-appreciated texture and flavor.

Ingredients
1 shallot, very finely chopped
2 cloves garlic, quite finely chopped
Le Stagioni d ’Italia Oil
1 1/2 cups risotto
1 cup of white wine
4 cups chicken broth
1 cup parmesan cheese
Salt, black pepper

Instructions
In a wide pan over medium heat, add the chopped onion and garlic with the oil to fry for a few minutes, occasionally stirring, until the onion softens and the garlic is lightly browned.
Add the risotto and stir the ingredients for a couple of minutes.
Add the white wine, lower the temperature to medium-low heat, and cook, frequently stirring, until the liquid is completely absorbed.
At that moment, we add half a cup of broth and, without stopping to stir, we wait for the risotto to absorb all the liquid before adding more. We pour another half cup of broth and do the same again. We continue adding broth until the rice is al dente, not too soft, not too hard.
Add salt, black pepper, Parmesan cheese and continue stirring until all ingredients are evenly distributed.
Serve the risotto on individual plates and sprinkle the chopped parsley on top.
